Cucumber, parsley, pineapple and lemon smoothie
A refreshing way to start the day! Perfect to serve alongside scrambled eggs or a slice of toast with a nut or seed butter.
- ¾ cup coconut water
- ½ English cucumber, chopped
- 1 bunch flat leaf parsley, leaves only, chopped
- 2 medium lemons, peeled and seeded
- 2 cups fresh pineapple, frozen
- ½ avocado
- 1 tablespoon maple syrup
- Place all ingredients in a large blender and blend on high for 1 minute until smooth and creamy. Divide into 2 cups, and enjoy!
