Cucumber, parsley, pineapple and lemon smoothie

A refreshing way to start the day! Perfect to serve alongside scrambled eggs or a slice of toast with a nut or seed butter.

Ingredients

  • ¾ cup coconut water
  • ½ English cucumber, chopped
  • 1 bunch flat leaf parsley, leaves only, chopped
  • 2 medium lemons, peeled and seeded
  • 2 cups fresh pineapple, frozen
  • ½ avocado
  • 1 tablespoon maple syrup

Method

  1. Place all ingredients in a large blender and blend on high for 1 minute until smooth and creamy. Divide into 2 cups, and enjoy!

Yields: 2 servings
