Sweet Cinnamon Omelette
This grain and dairy free omelette is great for breakfast or a snack and offers a sweet mix up from the usual savoury omelette. Packed with protein and fibre it is a great way to start your day!
Prep Time (min)
2 organic eggs
1-2 teaspoons of cinnamon
½ teaspoon of honey or rice malt syrup
½ teaspoon of vanilla extract
1/3 cup of shredded coconut
1 teaspoon of Coconut oil
Yoghurt and fruit for topping
1. Whisk eggs in a bowl, adding in cinnamon, honey, vanilla and shredded coconut. Mix well.
2. Heat coconut oil over low heat in small fry pan
3. When oil has melted pour in omelette mixture
4. When the omelette is firm flip over and cook on other side
5. Serve with yogurt, fruit, cinnamon, coconut, whatever your heart desires – remember fresh and in season is best!
